These delicious deviled eggs are the perfect answer to the low carb/keto dilemma that comes with pot lucks and summer barbecues.
You won't be saying "Oh no! What am I going to eat?", with these tasty HFLC morsels around. Make sure you bring enough because both adults and kids tend to eat these up quickly!
Delicious Deviled Eggs
Here's what you'll need:
a dozen large eggs, hard boiled and sliced in half longways (organic preferred)
3/4 cup sugar free mayo
2 TBLS ketchup (sugar free)
2 TBSP rice wine vinegar (sugar free) or apple cider vinegar
2 teasp. stevia (or to taste)
1/2 sugar free pickle, very finely diced
Paprika for the garnish
Here's what you'll do:
Carefully remove all of the yolks from the boiled, cooled and sliced eggs and put them in a medium sized bowl. Add the mayo, ketchup, vinegar, stevia, and the diced pickles to the bowl. Mash with a fork vigorously until creamy (you may have to add a bit more mayo during this process). You could also use an electric mixer for this. When almost all of the lumps are gone, load the mixture back into the egg whites and sprinkle with paprika.
